I like to cook "Birmingham Wings", a recipe a good local pub had. I take the wings and season them with one of my local BBQ seasoning, or just salt, pepper and garlic sometimes. I let those get happy in a zip lock for a while then pour in Dale's Steak Seasoning liquid, kink of like a soy sauce with much more flavor. Dales is another local Birmingham product. I let them marinate as long as I can then I put them in The Big Easy, usually 3 or 4 layers on my racks and cook 45 minutes or until they are done. The top layer will finish first, take them off and put in a pan covered with foil, then take the other layers off as they are ready. Depending on how long you let them go they can come out an almost black color with a nice crunch. My wife makes homemade Bleu Cheese to go when them.
