If you're eating low carb and missing pasta, Zuchini or yellow squash makes a great option!
You can cut it into thin slices for Lasagna noodles, or cut the slices into thin strips for linguini, etc. I love the stuff as well as regular Pasta, and my wife likes it even better.
My wife picked up one of the spiral veggie cutters which makes it even easier to make zucchini pasta. Here we used both green and yellow zucchini. You can also use regular yellow crookneck squash, just cut off the neck.
Just steam the zucchini pasta (steamer or microwave), drain it, and toss with just a little salt. You can also toss in a little butter or olive oil, if you like. Just like pasta it tends to absorb the flavor of whatever sauce you use with it.
1 1/2 cups of the zucchini pasta (4.5 net carbs) topped with some Italian sausage crumbles, 1/2 cup of low carb marinara (5 net carbs), and a little cheese. Less than 10 net carbs and very satisfying!
Also served with a side low-carb Almond/Flax garlic cheese bread.
