I too have a Blackstone flat top & I cook on it almost every week.
Very versatile & fun to use.

Scrubbed the potatoes. Ran them through a mandolin. Rinsed them well. Coated with vegetable oil. Cooked for about 40 minutes with minimum flipping. Took off, salted and placed in paper towel lined bowl. Enjoy!

I did not precook. Next time I am going to try peanut oil. That is what the local famous beach fries people use.
