SV Pacific Cod
« Reply #-1 on: March 15, 2018, 12:32:51 PM »
I have purchased some cod a while ago and what we didn't cook up fresh I seasoned, then vaccum sealed with a pat of butter and froze it for later.  I took one of those out and cooked in SV at 132 for 40 minutes, once done I plated and drizzled a little bit of juices from bag and lemon juice on fish.  The fist turned out great and really is a great way to cook fish like this because it is so easy to over cook and get dry.  Made a quick arugula salad to go with it, arugula, candied walnuts, goat cheese, blueberries and homemade honey lime dressing.

Looks great!!

I recently have  done a few SV fish cooks,  Halibut once and  Mahi Mahi  twice.   All have come out perfectly

Defiantly has up'ed my fish game!!

I can never seem to get it right, on the grill or  oven or when I try to saute, always seem to  overcook it a bit

Have some cod filets in my freezer and looking for some recipes to try.

defrost first, probably would need to cook an additional 30 minutes if you put in frozen.

It is really good pan fried in cast iron too, I use a termapen to constantly check temp to make sure it doesn't get overcooked, but I like it better in SV, only thing missing is the sear you get from CI.  Might have to hit for 45 minutes a side in CI next time after I pull from SV.
