The local market had this on sale this week.
I bought a 4 pack, 2 for Ms H and me and 2 for the freezer.
On to the Weber with red hot coals, 2 chunks of hickory, and hickory chips at the last minute for more smoke and flame. then a brief rest and onto the hot sizzle plates
Time to eat. Very tender, with a char and smoke taste that was wonderful.
