The local market had a special sale on NY Beef Loin Bone in Steak, $4.77/# so I bought two cut @ 2" thick.  Then seasoned with OO, S&P, GP, OP, and smoked paprika.



On to the Weber for a indirect cook with two hickory chunks included with the charcoal.  When IT reached 128* I moved it to direct for a nice sear.



After a 5' rest the IT was 132*.  Time to cut and serve with baked potato, sour cream, and cooked mushrooms.  One of my favorite cuts of meat.
