El bistec adobado en mojo criollo

Thought I'd make some steak sandwiches tomorrow.  Had a flank steak in the freezer and some (Goya brand) Mojo Criollo in the fridge so…

… thawed and marinated the steak in the Mojo for an hour, dried in the fridge for an hour, and slapped in on the SRG grill for a sear and a short cook.  Then foiled, rested, and had a slice before putting it away for sandwiches later - excellent flavor!



So then SWMBO says "How about some tacos or something for dinner?"  I decide on "or something" and put some of the flank steak on tostadas, add some queso fresco, and ran it through the oven for a bit.  Added some diced red onion and shredded cabbage and topped with homemade (Pachanga-inspired) salsa and tajin (a chile-lime seasoning).  Now excellent times two (and sandwiches yet to come). 



Life is good! Now if I could only take pictures worth a damn (a little help, please, dee).

Pappy - Yes, it's the Boos 30" Pro Chef.  Got it off Craigslist about 3 years ago for $300 (usually retails for over $1,000).

RAD - Never made SPAM tostadas but don't know why not.
