This is my favorite omelet, and I often have this breakfast for dinner.



Three eggs, smoked pulled pork, chili verde sauce, jack and cheddar cheese.



After the first flip.



Plated on a hot sizzel platter with home salsa and home pickeled asparagus.  Yes, this was delicious.

Haven't seen an omelet pan like that since I was a kid. Worked then......looks like they work still. Great chow!

i still flip my omelets in a small skillet....taught to me years ago by a old fry cook..... i would like to flip your omelet right on my plate right about now.....
