Pepper Stout Smoked Pork Pasta

This is a modification of Larry Wolfe / Smoke / Me  recipe.

Perfect for a pellet grill as only a light smoke needed .
Cooked on my Chargriller Kamodo as temps during cook were cold!
3 lbs pork butt
2 large colored ( red, orange, yellow ) sweet bell peppers.
1 large red onion
6-8 oz sliced mushrooms
6 cloves minced garlic
3 jalapeƱo peppers ( optional)
1/4 cup worshishire
1 bottle stout ( beer)

I oiled then heavily salted & peppered a 3-4 lb pork shoulder ( I cut the 7 lb from grocery in half )
Put on smoker with oak wood @ 250 till temp reached 165F in meat.
Everything else goes in pan & put meat in center.
Back in cooker @ 325 or so till pork is 200F
Pull pork in pan & back in oven/ cooker bout an hour to evaporate some liquid.
I thickened up with Tony's powdered Roux( use Wondra flour , cornstarch , or arrowroot .
Served over pasta , really good.
