Burger Animal Style

Allright, I've never been at In-N-Out Burger's and I just know it from "The Big Lebowski". But the other day a food blog writer friend of mine cooked this Burger Animal Style and published the recipe on his blog. In-N-Out defines the animal style as a "burger of your choice with hand-leafed lettuce, tomato, a mustard cooked beef patty". I liked that idea and tried it today.

After cooking in recent time always with my ceramic cookers, I used my chimney starter today again since a longer period, because I needed a bit more surface for grilling.



Instead of a griddle I used the backside of three GrillGrates. The patties were seasoned with salt and pepper and seared on that seasoned side first. Meanwhile the other side was seasoned with salt and pepper as well and spread with CYM. Then flipped them and seared the CYM side. Smells goooood! :)







After searing the GrillGrates were pulled over indirect heat. After I put cheddar on the patties, I spread sauce (8 TSP mayonnaise, 4 TSP ketchup, 2 TSP pickle relish, 1 TSP white wine vinegar, 1 TSP sugar), some lettuce, pickles, sliced tomatoes, on the buns. Then I put the patties and caramellized onions on the buns - and ready!

















Mmmm, this is a tasty burger! 8)

That looks fantastic!  I never thought of coating a hamburger in mustard to cook.  Mustard on butts seems to disappear.  Could you notice it on the burgers?  Was it a strong or subtle flavor?

Could you notice it on the burgers?  Was it a strong or subtle flavor?

It was a strong flavor, that harmonized perfectly with the meat. But you got to have not to much meat in the patties: these were 120 grams/4,2 ounces ground beef. Last week I tried them with 230 grams/8,1 ounces and the mustard was almost not noticable.

But I have to ask...Why the vinegar and sugar?

I followed the recipe. ;)

Ok WC you did a good job. Being a California boy I am very familiar with In-N-Out. Animal style is one of those secrets that are not listed on their menu but they will do. They also make animal style fries.

The difference I can see is they use two patties on the double-double burger that are much thinner than your one. So try grilling some thinner patties.

I believe they also grill the caramelized onions in mustard and it might not be the patty but I could be mistaken.

Layer your cheese in between and at the top/bottom of the patties.

I may need to get some In-N-Out for lunch today. If I do I will take some pictures of the animalized burger ;)
