Chili enchiladas

Today I made a chili con carne sauce with beef, onions, tomato sauce and some spices to spread on some enchiladas with Gouda cheese and onions inside. Some cheddar on the top and into the pellet grill for 10-15 minutes.

















Plate with guacamole and iceberg lettuce salad:

Enchiladas are always at the top of my health food list and these look mighty pleazin'  ;D

Just in case you haven't thought of it:  Leftover enchiladas make a dynamite breakfast with a couple of eggs the next morning!

But the leftovers will surely be a dynamite breakfast without eggs, either.  ;)
