Today was time for a traditional meal of our region: Schwenker.

What is a Schwenker?

A Schwenker is a pork steak, cut out of the neck/chuck and marinated for at least one day in a mixture of oil, onions, garlic, mustard and spices like salt, pepper, oregano, thyme, paprika, etc.

A Schwenker is also a grill, that is fixed with a chain to a tripod over a beech wood fire.

And a Schwenker is the guy who cooks the Schwenker on the Schwenker.

Schwenker on a Schwenker usually looks like that:



But today I left away the Schwenker and put the Schwenker on the charcoal grill. And the Schwenker was store bought and not home marinated.

Man, you always have fantastic looking cooks.  I'll have to cut a couple steaks off my next butt before smoking it so I can try this.  And I just smoked one this morning.  Missed out...why didn't you post yesterday?

Another use for "schwenker"... The drool that comes from one's mouth while looking at the food pron of the schwenker.
