Because these come from between the ribs...would you say that they have flavor and texture like the ribeye ?

It's very similar to ribeye, but IMHO entrecote is more tender and a bit better in taste.

Done to my liking WC!!! Nice cook. That's the way I like my steaks, nice even crust. I prefer that over heavy grill marks. Don
