Help with Bok Choy

I need some help here - I got a basket of veggies that has a HUGE thing of Bok Choy and Napa Cabbage.  Can I freeze these?  I am going to use parts of it tomorrow for a stir fry cook but there is WAY more there than one cook.   Do you think I could dice/slice it up blanch it and then freeze it in a foodsaver bag and it still be good?

All the help guides I  googled said to blanch them 1-1/2 to 2 minutes then put in cold water to cool, drain well and freeze in plastic bags making sure to get air out.

Thanks - that is what I read online too but was hoping someone had done it before.  I will give it a try.
