zander filets and couscous in banana leaves

Today I cooked zander (I hope I found the right word for it) on couscous in banana leaves on the pellet grill at 330°F for 20 minutes. Let the pictures do the talking.

Looks great WC!!! A good healthy meal! I always wanted to try cooking in banana leaves but none to be had here. When I was in Thailand we used to get a fried rice that was served in banana leaves. Don
