Dee,
The recipe calls for 350.  I wanted to use my MAK like an oven.  My MAK holds a temperature better than my kitchen oven.

A question. When cooking with beer I have found that while the type of beer, stout or lager or wine, white or red,  can make a difference in the final taste that the quality and price of the alcohol doesn't seem to make a difference. Does the Knob Creek or Maker's Mark make a difference? If so is because this is baking instead of BBQ?

Ken,  Thanks for the info on different types of beers tasting different. ;)  Since I don't drink beer I wasn't aware of a big difference but I would have guessed it. ;)    About the only liquor I have here is two varieties of Jack Daniels and have to scrape by with that.  Dee

Deb,
Come on down!  If I know you are coming, I'll bake a cheesecake for you.  You were an inspiration to me.  Next time I will clean my MAK ahead of time and cook it in there.

TP,
The alcohol "bakes off", leaving the flavor of whatever liquor you used.  I have a hunch that I shoud have gotten the MAker's Mark.  It is a smoother, sweeter flavor than Knob Creek.  Over ice, they are both good.

Art,  You were wanting the temp to be 350 in the MAK.  What is the lowest temp this can be this could be done at?  My MES goes to only 275.  Did you want to smoke the cheesecake or were you just wanting to use the MAK for the cook?  Dee

I have seen some recipes that are baked at a lower temp than 350 so I bet the 275 would be fine, it would just take a little longer.
