The wife said why don’t we make some enchiladas from the chicken and rice leftovers. I said yea I can do that. Here we go.
Grate some chedder and Monterey jack.
Break out some refried with Jalapino.
Soak the tortillas in some enchilada sauce.
Spread some beans on the tortilla
Add the chicken and rice
A little more sauce on top and into the oven at 350 for 30 minutes
Add some cheese and into the oven for 15 minutes. Some reduced sauce, fresh Quac, tomato, lettuce and sour cream. Some green onions let’s eat!
