OK... I'll admit it!

I "borrowed" this recipe and modified it a bit... Jalapenos stuffed with cornbread and then smoked...



Stuffed jalapenos on a Frog Mat along with some extra jalapeno cornbread...

350 degrees F. for one hour with apple and hickory. (I think next time I'll wrap them with some blanched bacon!)

You're off to a good start -- I like your concept  ;D   They really do cry out for bacon, though!

Looks great, I've put Jalapenos in my cornbread but never cornbread in my Japs :)

Looks good, I agree maybe some bacon and a little shredded cheese mixed in with the cornbread mixture. Nice idea

This is a very basic recipe for Southern cornbread.  I'd probably make it plain the first time or so just to get the hang of it.  After that you can add cheese, jalapenos, bacon, etc., etc., etc.

     1.  Put a tablespoon or so of bacon grease in a 10-inch cast iron skillet and put in oven.  Turn oven to 450oF.

     2.  Mix 1 egg, 1 1/3 cup buttermilk, 1/4 cup vegetable oil, and then mix in two cups of self-rising cornmeal mix (I use Martha White's).

     3.  Pour batter into greased skillet and bake for 25 minutes or so (until golden brown).

I'm told you can make cornbread without bacon grease or a cast iron skillet but I don't see how.

Turtle,  It's 1-2 years in jail in GA to make cornbread without bacon grease and cast iron skillet.  We do give yankees  two years for a grace period.  As you know it takes a while to train 'em.   Dee
