How to spend Mother's Day when Mom isn't home

The wife is in DC have a mother-daughter vacation for mother's day. So I have a number of things going on tomorrow.

 I am making grilled rack of lamb for dinner. I plan on marinading overnight, cold smoke in the morning for a couple of hours and then let it rest in the fridge until its time to put it on the grill. Plan on smoking with the rosemary, thyme and pepper pucks from Cabela's.
Here they are marinading in some oil, thyme, rosemary, garlic marinade.


I am also making 5 lbs of pepper snack sticks.
Using Frisco pepper stick mix

Here it is mixed with cure added


Mixed into the meat, bagged and into the fridge for overnight rest


Also plan to make some basic pork sausage.

I'll post more tomorrow.

Here are the results;

Five (5) pounds of pepper sticks are stuffed and ready for the smoker


Cooked up a patty from what was left in the stuffer.


Hanging in the smoker. Used 2 hrs of chile peppers and cumin pucks


Out of the smoker and into an ice bath (sorry for the blurry pic)


Now the Rack of Lamb
Took out of the marinade in the fridge and cold smoked for 2 hrs with Rosemary, Thyme, and Pepper pucks. Lamb ready to go in the smoker.


Put on the Weber grill. All done with a side of spinach.

They turned out excellent and the smoke taste was perfect.
Why couldn't Noah have swatted the 2 mosquitoes?.

Nice job Gus, them sticks and lamb look great!! You ever try a creamed spinach with bacon, That's the only way I eat it Popeye or not ;)
