Smoked meatloaf
« Reply #-1 on: May 13, 2013, 09:30:54 AM »
Had some 80/20 leftover that had been previously frozen so I had to do something with it... smoked meatloaf came to mind.

Sautéed some onion, bell pepper, minced carrots, garlic and jalapeno. Mixed it with the 80/20, seasoned with Worcestershire, smoked salt and smoked pepper. Formed into large patties. Onto the Yoder with hickory at 350 degrees F. for about 40 minutes... Glazed with a simple combination of brown sugar, hot sauce and ketchup... Back on the Yoder for about 20 minutes to an internal temp of 165 degrees F.

Served with smoked potatoes (garnished with butter, sour cream and fresh chives) along with steamed broccoli.

Not a particularly pretty plate presentation but pretty good eats (sorry AB).
