Dry Aged Ribeye and Baked Lobster Tails

You always know dry aged beef by the color. Dark.



Going to use that clarified butter for a couple of things

Tails in the oven at 350



Going to cook the steak hot and fast. That old pan is about 40 years old.



Gotta eat

Nice crust on the steak. Tails cooked to an  IT of 150.

Not that but lobster is cheap this year. Kroger has the canadian 6oz tails for 5 bucks. Eat them while their cheap! A buddy of mine bought 32 yesterday! ;)

Yes. But its easy to tell. Cold water tails are red. Maine or Canadian.  Warm are green. Bad JuJu!
