I know this is last minute, just hope someone can help me out. We are leaving for The Lake of the Woods in a few hours. I will be going past a great, old meat place - still have real butchers - and checked - they should have some tri-tips available. We will be with my wife's parents for the weekend. They have a home on Oak Island. My FIL doesn't eat meat that isn't cooked through (a la Kimmie.) I was thinking a trisket might work. The cooker up there is one of those dual fuel things - one side is propane the other is charcoal. I will bring my own thermometers, rubs, etc.

So, my urgent question - any thoughts on doing a trisket on this contraption?

as long as you can control the temps within a reasonable swing and have a way to deliver some smoke, you should be able to cook it on the dual fuel thingie.
Why couldn't Noah have swatted the 2 mosquitoes?.

Try to keep the grill temps around 260F and go indirect.

David, give him the burnt end (small piece) that's what Kimmie would eat and it should be good for him  ;)
