If y'all have not done this I recommend you give it a try.  Your family will love it.  What I did tonight was to take a simple meatloaf recipe, form a loaf, put it in an aluminum disposable pan,  slather on some Hubba Bubba BBQ sauce and put it in the MES at 275* with some hickory pellets in the Amazn tube and some pecan chips in the hopper chute. I smoked it for about 30-45  minutes and finished it off in a 375* oven because I was running short on time.  Served some Hubba Bubba on the side.  Boy it was good. 

When I'm smoking in my MES I don't wait for it to get to the set temperature before I put my meat in.  I put the meat in when I have it ready.  It does take awhile for the MES to get up to temp (which is usually 225* for me) but it will start smoking around 115*  or  so.  By putting the meat in before the MES reaches temp I get to smoking it just a little quicker.

I believe you Dee. I believe you cooked meatloaf ;)

If you dont wait for your smoker to get to temp and then put the loaf in, do you get more smoke that way at the beginning of the cook?

Since Dee has never posted a picture, that I know of, in any forum I'll post one of mine for him  :D  ;)  Here's what Dee's smoked Meatloaf might have looked like!!



It is true that smoked Meatloaf is hard to beat!  After my first smoked Meatloaf I was spoiled and haven't done a Meatloaf in the oven since.   8)

Dee after I did a meat loaf on my smoker I have never made one in my indoor oven since. They are great. For me they come out better if they are a little wetter that you normally do in the oven. Don

Yep, it looked very similar to that picture but it was somewhat smaller.  Other than that...you get the picture.

Hmmm.  Has anyone considered maybe adding some stuffing (like cheese, veggies, other meat, etc.) to the meatloaf and then taking some bacon and working it into some kind of weave pattern and wrapping the meatloaf in it?  Might be worth trying. 

It would probably make the meatloaf pretty big and fat so you might want to call it a "biggie" or maybe a "fatty."  That's it - let's call it a "fatty!"
