Mahi Mahi and Salmon

Hey guys I am thinking about trying to cook some fish either on the grill or possibly in the oven.

I have never grilled or baked fish and I was thinking I would start with Mahi / Mahi and eventually try Salmon.

My question is can you marinate these fish?

I know I have read somewhere  to be careful with marinades on certain cuts of meat because It can cook the meat will its marinating.

So that being said is if ok to marinate these 2 cuts of fish?

I have never marinaded fish before, I like to put some seasoning on fillets and pan fry in a little olive oil. I will yield back to more learned members of the forum.  ;) :D ;D 8)

I either cook salmon with Italian dressing as marinade or with a teriyaki marinade .
Mahi mahi ill use Italian dressing with a bit of lime added.
Both grill well, try to cook the salmon till med-rare to med high heat
Mahi cook till flakes easily.

I grill my salmon indirect on a cedar plank with seasoning, apples and lemons.

Any marinades with citric acid will cook the fish if in high enough concentration. Think of lime juice as a high conentration citric acid.

I would grill Mahi Mahi at high heat. You can season before grilling. You can marinate with some mango juice to give a lttle sweet flavor for a few hours. Then top the fish with a hot pepper and pineapple topping.

And although I do enjoy grilled Salmon I really love it baked/smoked better. If grilling I would not marinade. It is also good blackened in a cast iron skillet. A nice surface seasoning of lemon pepper and salt makes it great for grilling.

You should marinate in a brine when smoking or baking. Then thoroughly rinse and air dry before baking/smoking. I also like to use Soy Vay Very Very Teriyaki as a marinade.

You don't have to baste the fish while grilling. You can just season it and grill over high heat. Fish cooks really fast so grilling will not take long. The mango juice marinade will give the fish a nice flavor.

If you plan I basting the fish while grilling then I would make a glaze. You could add some sugar to the mango juice and reduce it on a stove until thickened. Then apply the glaze right after grilling, kill the heat, and let it sit for a few minutes with the lid down on the upper rack to set the glaze.

There are no limits on what you can use. Go with flavors you know and love ;)

I don't do salmon but love Mahi.

If you're going to marinate it do it quickly... no more than 10 minutes because the citrus will start cooking the fish and make it mushy.

I don't like a long marinade for fish (except ceviche.) I love mahi-mahi - it's a very sweet fish and works well by itself. Salmon - there are just SO many options...  :P

But here is one I like of you want some additional flavor for your mahi-mahi. (4 fillets)
  • Honey - about 3 TBS
  • Soy Sauce (low salt) 3 TBS
  • Balsamic Vinegar (one you like) 3 TBS
  • Fresh grated ginger root 1tsp (more or less)
  • Garlic - 1 clove fresh crushed - more if you like garlic
  • Olive oil - 2 tsp
  • Kosher or sea salt to taste
  • Fresh ground pepper to taste
  • Mahi-mahi fillets for 4

Mix all (except salt, pepper and fillets) then season fish with salt & pepper and add to marinade. Put in fridge for about 1/2 hour - quick marinade.

You can drain the marinade and pat the fillets dry (reserve marinade) - grill over high heat - turning once till the fish flakes. Or add some oil to a med-high skillet and fry about 5 minutes - turning once until the fish flakes easily.

Heat reserved marinade until it reduces to a consistent glaze. Pour over the fillets and serve.



You can't catch a fish if you don't get a line wet...

Lost arrow do you marinade in Italian dressing or just baste?

If you marinade...???...how long?

Marinate salmon 20-30 min.
