I got inspired by another post to make some Kimchee... used to love it when I was stationed in the Philippines...

Didn't have all the "proper" ingredients but substituted.

Looks like a good start. I would suggest on the next batch to run your radishes and your carrots through a food grater.  Allows the juices to be extracted and mixed better. Also makes for a more consistent mouth feel/bite. Just MHO

I agree but couldn't find the grating plate for my small Cuisinart and was too lazy to go into the basement to get the large Cuisinart. (Similarly I didn't want to bother with the mandolin.) So I just used a knife.

Didn't have any Korean red pepper (the nearest Korean market is 90 miles away) so I used crushed red pepper flakes (3 1/2 T) and 1/2 teaspoon ground chipotle.

Good thing - carrots really mess up the tuning and radishes ruin the strings completely.

I hope it turns out good for you. Just MHO but you will not get the best authentic Kimchi taste unless you use the Korean Red Pepper Flakes. To me it has a whole different flavor than our red pepper flakes. I get mine from Amazon for $19 a pound but is shipped from Whole Spices and the shipping is $8.95 so that's $28 a pound. A half cup just weighs about 3 oz. so you can get 5 or 6 batches of Kimchi from it. Don
