Osso Buco a la Romangna

Put some veal shanks onto the Mak to pick up some smoke.





Then dust in flour and brown on both sided.





Start the sauce. Saute the carrots,celery,onion and garlic. Add some tomatos.



Add some homemade beef broth, Veal Demiglace,white wine and herbs. Add the shanks.
Back on the Make for 2.5 hrs at 250



Make some finishing sauce. Beef stock, red wine and veal demiglace. Reduce.



Make some risotto. Saute some blanched green beans and let’s serve.

Nice cook. Well, of course it is - RickB did it.

I make a lot of osso buco and the only things I do differently are to use beef shanks rather than veal because they're more readily available and (IMO) have a richer taste, and serve with gremolata (parsley, lemon zest, & garlic) because it's the right thing to do.  I also generally serve with couscous because I'm too lazy to make risotto and osso buco at the same time.
