Italian Dressing and 7 up marinade for chicken need help
« Reply #-1 on: August 02, 2013, 06:59:15 PM »
hey guys how long can I marinade chicken breast in 7 up and itialian dressing and the food be safe.

I love this marinade but I remember reading something about lemon juice or citrus juice can cook the meat..not sure if this apply to poultry?

Anyway I want to marinate some chicken in 7up and Italian dressing and was thinking 24 hours would do but not sure if that ok and safe?

Thanks

Chicken absorbs flavors and smoke like a sponge. I would go about 2 hours..maybe 4 hours tops...

You can leave it in the marinade overnight however I would be more concerned about the vinegar in the Italian dressing than the 7-up. It might break down the proteins too much and make for a mushy chicken.

Sounds like that might be a better injection than a marinade.  I'd shoot that bird up and throw it in the smoker!  I like Tony Chacherie's Roasted Herb & Garlic injection in chicken; gives a really good "zing" to the meat.
