Planked salmon

Today I cooked a small piece of salmon on a ceder plank.

The salmon was brushed with a paste of lemon and orange juice, honey, mustard, balsamic vinegar, garlic, chives, salt, pepper and oil. Then I cut slices into the salmon that were filled with half lemon slices.

Then it was cooked on a preheated plank for 20 minutes and plated with rosemary potatoes.

WOW that does look good WC!!! Nice idea on the lemon slices and I like cedar planks for fish too. On my Traeger I don't get any cedar flavor but it keeps any marinade and the juices on the fish to keep moist! Don

What a great idea. I love salmon in almost any form. This is a great new idea. I am not crazy about cedar - I prefer alder and maple. Do you think the cedar made a difference? Thanks for the idea!

Here in Germany cedar is most popular for planking. I've just made out a source for alder planks and I'm gonna try that out. Although I like the cedar flavor very much.

Did the salmon pick up much wood flavor?

The cedar flavor was present but not too much.

Can you give specifics about plank placement and heat source (position), cooker, etc.

Soak the plank for at least 1 hour in water. Place it with the side you want to cook on for a few minutes over direct heat to disinfect it. Then flip it and place the food on it. Place it over direct heat. It doesn't matter if you use charcoal or gas, both works fine.

If you use a pellet cooker with no option for direct heat, you don't have to soak the plank in water.

Cook on high heat (at least 360°F) for about 15 to 20 minutes.

For the sauce use the following ingredients:

1 TBS lemon juice (or lime juice - in that case use lime slices instead of lemon to put into the salmon)
1 TBS orange juice
1 TBS balsamic vinegar
1 TBS honey
1 TBS mustard
1 TBS minced chives
1 clove of garlic
1 tsp salt
1 pinch black pepper
1 pinch chile powder

Blend that in a food processor and add a bit canola oil.
