Smoked steelhead as a breakfast ingredient

Smoked a couple of steelhead filets the other day and had it for dinner - succulent with delicate alder smoke, and a rub consisting of smoked paprika, a bit of cumin, thyme, and a tablespoon of brown sugar.  One thing we enjoy about smoking food is coming up with (for us) are different ways to enjoy the smoked products.  The below is a variation of other poached egg dishs we have tried, but we have never used smoked steelhead as the meat protein.  We still had some of the crusty bread my wife made the other day, so this is what we ended up with:


Ingredients (per person)
  • Small portion of smoked steelhead filet (alder)
  • Thick slice of crusty homemade bread
  • Homemade fake "Hollandaise" sauce", which is something my wife concocted: mayonaise mixed with some mustard, capers, and pickle juice
  • one poached egg


My wife likes to add a dollop of the fake Hollandaise on top of her poached egg, with the bread dry

I like to "butter" the bread with the Hollandaise, then break the poached egg over the fish, and top with a good amount of black pepper

Paired with a chilled sparkling Cava and good weather (mid 70F), and this was a Sunday to remember

lol, you guys are too kind  ;)

My wife's looks kinda dry to me, but she swears it was really good, and we both usually like our salmon on the rare side.

lol, thanks teesquare; one of my projects in the near future is to make a couple of lox filets.

My wife was gone one day and I had some homemade gravlox that I wanted to use for something different.  I had small crisp crisp crust breads that I'd purchased at Costco (from their bakery - the kind with 6 small loaves in a paper sack).  Slicing the bread into 3 mm thick slices, and baking them until crisp made great small toasts onto which I put some of the fish, onion, cream cheese, and capers.  I had a whole plate of those treats, and it is still a favorite of mine.

Looks great!!! I didn't think fish sounded good for breakfast but I'd sure eat either one anytime! Like the one with pepper best! Don

They both look and sound great - I love steelhead. But, I'm with you - may not look as pretty, but the broken egg and hollandaise on the bottom wins my vote!
You can't catch a fish if you don't get a line wet...

I don't miss the snow in Erie, PA but I do miss the steelhead.  :(  That looks real good.

Thanks gents! One of the really nice things about being in the northwest is that we have a continuous supply of good fish, especially at Costco.  For instance, we seasonally get wild Copper River salmon for $6.99/lb
