Irish ox entrecote steaks

Today I was visited by good friends to grill some steaks of an irish ox entrecote. They were reverse seared: first smoked with a chunk of hickory on the big egg at 225°F to an IT of 113°F. Then they were sizzled at the more than 580°F hot little egg until an IT of 131°F was reached. While I gave the steaks a short rest, I cooked some noodles with veggies on my newest toy: a wok and a gas fueled wok cooker with 24 kW power!

@ Pappy and Smoke: Entrecote is very similar to ribeye and is basically from the same section of ribs. While ribeye is close to the chuck the entrecote is close to the short loin.

What an excellent pic series, Wing Commander

Each pic made me a bit more hungry for dinner, and I just love wok cooking - if you don't mind, what wok device did you purchase?  I would love to have some kind of circular gas fired appliance that I can embed into the center of a table so guests can cook their own food at the table, Korean BBQ style.

My wok burner is a MANniu X72.

I wouldn't embed that device into a table to let your guests cook on their own: it's got way too much power for that. It's made for stir frying and your food is done in very short time. These noodles with the veggies for example were done inbetween less than 2 minutes.

That is a serious looking wok burner! Reminds me when I lived in Hawaii. I used to hang out in the corner noodle places. I loved watching the volcanoes they had under their woks. Someday I will get a burner like that - I'm thinking a used jet engine!
