Sous Vide Tri-Tip, a bun, and Dr.Pepper BBQ sauce...

Pepper jack cheese on the bottom and Tabasco peppers on top...

Served with wings...

Dang that was good!

I'm liking that chopped tri-tip ... we don't see it too much in the Houston area.

I could eat a couple of those!  After you posted the tri tip pics and my wife loved them, I can't wait to order the controller you found - I have one of the old style crock pots (oval shape) that is designed to do things as large as a small turkey.  The first thing I'm going to try are a couple of vacuum sealed New York strips and a couple of boneless ribeyes.  Can't wait!

I had to laugh a little as I see you served up that beautiful sandwich with a wing chaser.

You are an artist. Could have used a few more peppers though.

Honest question Mike... Are you at all put off by the appearance of Sous Vide meat?  I have had it, and it tastes fantastic when done right, but I guess it is like a good smoke ring.  My brain can tell me that it doesn't matter, but my eyes can't help but think it does.

When it looks like this... Yes

But the same meat after a quick sear... No

And when the interior looks like this... Heck no! 8)
