LOBSTERMAN !!!

Let’s get the Rib Roast ready.

Some BP Money Rub and fresh cracked black.



Cooked to 125 IT and rest.



Let’s get a 14oz Maine lobster tail cracked mounted and ready to roll.



Cook to a perfect 145 it.

Made some roasted garlic mash with more cream and butter than the Lord allows. Sautéed some spinach for the wife and some fresh yeast rolls. Made some reduced beef stock and veal deglace  gravy and away we go.

The lobster served with drawn butter.

Wow the lobster looks great.  Can you tell me how you open the to side to get the meat looking like that please

Ok it doesn't come out the side. With lobster underside down take a pair of kitchen shears and cut thru top of shell dead center to almost the tail. Turn lobster on its side and and press down till you hear it crack. Quite hard. Turn it right side up and with two fingers under the meat pull it out of the top of the cracked shell just to the tail. Clean any black vien and push the open shell together. drape the meat over the shell. Your ready to cook. 350 for about 20 minutes basteing with butter and top with paprika when done.

I "butterfly" my tails too
but I leave the meat in the tail while I cook it on the grill
basted with garlic butter while they cook


Looks great Cap'n. I too have butterflied. I find its much easier to overcook though. But I love then any way you can cook them. I like to bake the big ones on the Mak and fry the small ones. Or butter poach all of them!

What great looking meats and lobsters.  I saw some big one pound plus lobster tails at Costco which looked like they came off a small gator.  As soon as I can convince IR2Dum to buy me some I'll grill  'em.  Dee
