Just a simple chicken parmesan

Softball practice tonight - need a quick dinner. Chicken Parmesan - noodles...

Pounded the chicken in a plastic bag till flat. Add some Mo Rockin Chicken spice. Grilled on the G2G. Added some home made tomato sauce, mozzarella cheese. Boiled some spaghetti.

No finished pictures as we were already at softball practice! Maybe next time. The leftovers were pretty darn good!

Should have said - added some slices of mozzarella and some more parmesan then put under the broiler to finish, The noodles were done but we had to run to softball practice. What was left when we got home was very good...  ;D

This is one I'd like to use, too.  I followed you through till the last couple of steps...one of those included a broiler.
1. Pound the chicken flat and grill it
2. Put it in a casserole dish and cover with mozzarella
3.  Combine spaghetti and tomato sauce and pour over the stuff in the dish.
4. Add some more mozzarella and then....???
Do what for how long at what temp?
We'll eat that.

Hi Jaxon,

Sorry, I left a couple steps out...  ::)

I also forgot to add that I put some pepperoni slices on the chicken before the cheese.

After adding the sauce, I put it in the oven at about 350* for about 10 minutes to get everything hot and melt the cheese under the sauce (once the sauce started getting bubbly, I took it out

Then added some sliced mozzarella to the top - cranked the oven to broil and put it back in (left the rack in the middle) and let the mozzarella melt and get a bit brown - like a pizza. That took just a few minutes.

The slices were an after thought - that's why the 2nd trip to the oven. Next time I'd add the sliced mozzarella right after the sauce and just do the whole thing at 350* until the mozzarella was done.

I hope you enjoy it. I just had the "leftovers" for lunch. That Mo Rockin Chicken and cooking them on the grill grates really make a difference!
