Easy crispy hash browns

I like an easy breakfast that doesn't take much time to prepare so we can enjoy the morning.  We love hash browns, and have come to rely on the dried hash browns we purchase at Costco - super easy to prepare and results in perfect hash browns every time (once you get the hang of cooking them)

Pour out some of the dried potatoes into a bowl, cover with water (1/2 inch above the level of the potatoes), and add a pinch of salt - then into the microwave for 1 minute to rehydrate


In the meantime, if you want to add some meat, now is the time to start preparing it - this morning I used some of the pork butt we prepared using the SRG last weekend - these chunks were chopped relatively fine.


After the potatoes have rehydrated (usually takes about 15 minutes), drain off as much of the water as you can - essential for crisp hash browns.  Place them on a paper towel if necessary.


The chopped pork was seasoned with plenty of salt and black pepper.  The chunks were also coated with a blend of smoked paprika, cumin, and thyme, then lightly fried to warm them through


Here's the outcome - very crisp potatoes and savory chunks of pork.


Top with an egg and you have a simple breakfast that will leave you satisfied all day.

mmm that looks good. I am planning some hash browns for the girls as the weather cools. They are done on the waffle maker. I'll post when I do them.

But, this looks like a perfect breakfast!

Hash browns are good with any meal. Those look great....I cant stand mushy taters......

Costco sells them in a 8 pack for about 6 bucks. You just open the top, fill with hot water, close the top, let sit for 10 minutes.

Then cook as desired. They are excellent......and no freezer burn
