Put meat into UMAI bag this afternoon. Plan on 28 day dry aging.

Rats!  I knew I forgot to do something before leaving town!  We're outta here tonight for a couple of weeks and I was going to start a 4-week ribeye before we left so it would be ready in early October.  I guess mid-October will have to do (which would be okay except that I'll have to look at yours for two weeks before mine is ready). 

On the other hand, you could ship yours here in a cold pack to arrive about the time it's ready and I'd trim, test, and review it for you ABSOLUTELY FREE! Photos included (just in case dee was thinking about submitting a competing offer).  No need to thank me; selfless is just the way I am.

Dry aged rib eye removed from Umai bag this morning a week later than planned.
Start weight. 17 pounds 8 oz
End weight.  13 pounds 12 oz
Loss before trim 3 pounds 12 oz
I did not trim anything before dry bagging so I
Expected that there would be a lot of trim.  By leaving
Fat on I think it ages better. 
Meat looks and smells good. Will try a steak on
Grill Grates this evening.

So you lose 3 pounds of what I guess is water weight? Then you trim them up? Any idea what your overall yield was?

I'm on 35W heading North. See you at dinner time ;D
