Every morning when I do my daily walking I run into a number of women walking their dogs and over time I've got to know them and have short conversations and pet their dogs before I move on.  During some of these talks they found I like to cook and one day I opened my mouth and said I'd fix a BBQ for lunch for them one day.  Well, two weeks ago yesterday I fixed a butt, some baked beans, cole slaw, and frozen peanut butter pie for about ten folks...a couple of husbands came for the free food.  They said they really enjoyed it and since nobody got sick it must have turned out all right. 

Well, now the purpose of this post and that is to share the recipe I used for the baked bean which is the best I've found.  It serves 6-8 folks:

6-8 strips of bacon cut into 1/2" squares
1/2 or so medium onion diced.  You can put more onions in it if you want.
1 bell pepper diced
1 jalapeno pepper diced.  Can use canned jalapeno if desired.
1 55 oz can Bush baked beans.  I used the grillin beans or some with bacon or other stuff in them. If you can't find a 55 oz can just get whatever you can to add up to around 55 oz. (That info is for the sake of IR2Dum in case he couldn't find that can.)
1 8 oz can pineapple chunks, drained.  The first time I made this it was great and I decided more pineapple chunks would make it even gooder....mistake, it don't.
1 cup firmly packed brown sugar
1 cup ketchup
1/2 - 1 T dry mustard

Here's what you do with the above stuff:
Saute bacon until crisp.  Remove from pan and set aside.
Saute onions and peppers until tender.
In a large bowl combine beans, pineapple, brown sugar, ketchup, and mustard.
Stir in bacon and vegetables.  Pour into a disposal aluminum baking pan.
(While mixing if things look a little dry, add additional ketchup 1/4-1/2 cup at a time.)
To make milder eliminate jalapeno and/or dry mustard.
Smoke at 220*-250* 2 1/2- 3 hours until 160*

If I'm doing a butt at the same time I'll put the beans under the butt as it smokes so the drippings run down into the beans.

Just remember this ain't brain surgery so you can mess with it as you wish. It halves easily. I do recommend doing it according to the recipe the first time.

That is my go-to bean recipe for the family. They love it.

Dee - that sounds great. I like to use several types of beans (always Bush) I like the different shapes, sizes, textures, etc. Never thought of adding pineapple - I will give yours a try. Thank you!
