Sunday morning update:  Not too bad a day, overall!  We finished 30th out of 72 teams, taking a walk for 5th in ribs.  Got 19th in pork -- it was better than that, but it may have hit a "cool" table.  Chicken fell in at 31st and brisket at 58th.  We got a little wet on Friday night and again about turn-in time but never got soggy.  Saw and chatted with lots of friends.

Sparky, you certainly don't need rib lessons -- you post pics of some beauties with great regularity  ;D

Suffice to say that my competition rib recipe has a lot of the same components and approaches you use.  I've "tweaked" it only very slightly over the three years I've used it and my last tweak was the addition of a splash of Tiger Sauce added at the foiling point (this was Billy's idea back earlier in the season) and it has worked well -- each of us has gotten in the top ten with it.  I've been using Sams Club ribs (no saline in the cryovac) but my next cook I'm going to travel to a town about 50 miles away where there is a real old fashioned butcher shop where I can get absolutely fresh spare ribs.  Other than that, I'm just gonna' keep pluggin' away and hope for the right judges.

Did the ribs and chicken in my Memphis.  The PBC is great for ribs at home but I don't have an adaptation or approach to use it for competition ribs and that takes a lot of time.  I did do chicken in it at Franklin and came in 8th.  It took me about five test cooks to adjust the timing to the right points.

I've got a conflict and won't be in Rocky Mount.  Hope you'll be able to get there, though.  Billy needs a "steadying influence"  ::)
