W.O.W. Sous Vide Chicken Breasts
« Reply #-1 on: September 21, 2013, 11:51:13 AM »
Started with a couple boneless and skinless chicken breasts...

Then coated with some Way Out West Trail Dust and Hickory Smoked Salt...

Vac sealed with some butter...

Into the water bath at 146F...

They will be done in 2 hours but can hang in there up to 6 hours with no problems ;)

To be continued...

So out of the water bath after 3 hours...

I put the bag into the freezer for 20 minutes for a quick cool down then into the fridge to chill. I will slice it later to have in my Ceaser Salad then the rest can be used for whatever else ;)

Pics of the sliced chicken later and a opinion of the results.

So here is the chicken out of the bag...

Perfectly cook and oh so moist...

Used some chicken for my Cesar Salad...

I have never thought that a boneless and skinless chicken breast could be this moist and tender. May not look that great but the taste was fantastic. The W.O.W. trail dust penetrated the meat and gave the chicken a fantastic flavor!

Sous Vide chicken is just outstanding!

Was this in a crock pot and did you run a PID with it to keep the temp stable. Looks good.

Yes Mike. I am using the Dorkfood Sous Vide Controller with a crock pot...

And I am using an aquarium air pump with a bubbler to circulate the water.

Muebe, your chicken looked so good I had to try it and I’m glad I did.  I copied you except I used a different rub and we ate it straight up.  It was the most moist, tender and delicious chicken we’ve had in a long time.  My wife, the sous vide skeptic, said, “You can do that one, again!”
I hesitate to add photos because they are nothing like the quality of yours, but how else can I show proof?  Thank you for lighting the way.
