That looks delicious, and I'm definitely going to save some of my pulled pork for something like this in the future.
On an aside, our spin on "nachos" in our area is to use sliced pan fried potatoes (about 1/8 to 1/4 inch thick), and the potatoes are crisp on the outside, yet fluffy and creamy inside. Of course, I live in Idaho, so what else would we do.
