Spicy black beans, fresh tomatoes, fried potatoes, and fried eggs

This is one of our favorite breakfasts, and we have it on most weekends

The ingredients

The spicy ingredients and black beans are placed in a bowl - the beans slightly mashed with a spoon, then the mixture stirred and heated in the microwave for 1 minute

Potatoes sliced on a mandolin, then fried on cast iron to develop good crisp - each slice is individually salted and peppered.  A local sells us farm fresh eggs - these were double yolk eggs.

This is how my sweetie likes her plate - she is into presentation  ;D.  A scoop of black beans onto the plate, top that with shredded Mexican cheese blend from Costco.  Into the microwave for 30 seconds. The egg is placed on the beans and cheese, then topped with queso fresco.  Fresh tomatoes were diced, then liberally seasoned with salt and pepper before being placed on the plate.  Add the crisp potatoes, and whe's all set.

Here's my plate (bowl).  I'm kind of a slob, and don't care that much about presentation.  ;D

lol, thanks David; we like to enjoy it with a modified mimosa - 1/2 Champagne (sparkling wine actually), 1/2 pomegranate juice, and frozen blueberries to keep it cold.  Ever so slightly sweet, the carbonated beverage pairs perfectly with the spicy dish.

Any time you make a dish with eggs and has a southwestern flair, it is a winner.

Since, I have unlimited time on my hands, feel free to stop by tonight and make that dish for dinner.
