If you can get fresh mangos...

... definitely try this out. SWMBO found the original in a magazine and with some minor adjustment it's become one of her "signature" desserts.

MANGO-GINGER UPSIDE-DOWN CAKE

Ingredients
   1/2 tsp. vanilla
   1/2 cup milk
   1/2 tsp. cinnamon
   1/2 tsp. salt
   2 tsp. baking powder
   1 1/2 cups flour
   2 eggs
   1 cup sugar
   1/2 cup butter
   1 tbsp. lemon juice
   3 mangos, thinly sliced
   2 tbsp. crystallized ginger, finely chopped
   1/4 cup brown sugar
   3 tbsp. butter
   
Directions    

Melt 3 tbsp. butter in 10 inch cast iron skillet. Remove from heat and sprinkle with brown sugar and crystallized ginger.

Toss mangos with lemon juice. Arrange over brown sugar mixture.

Beat 1/2 cup butter until creamy. Gradually add sugar. Add eggs, 1 at a time. Combine flour with baking powder, salt and cinnamon. Add to butter mixture alternately with milk. Stir in vanilla. Spoon over mangos.

Bake at 350' for 35-40 minutes. Cool in skillet 5 minutes. Invert onto serving platter.

That sounds excellent. When I lived above Honolulu (guest house in the pali) we had a mango tree in the yard. Mango bread, muffins, etc. were a daily delight! Thanks for the reminder Ka Honu!

That does sound delicious - mango is one of my favorites, but good ones are difficult to find in my area.

Key - Not sure who you mean.  The only one I know of as "Mango Man" is a street person with long dreadlocks who has been wandering around Kailua for at least 25-30 years.

Yah same guy, he's been there forever.. His Name is John Cruz, just glad to hear he is still around.

He has a walker now (broken leg several years ago) but still hanging out in Kailua.  Interesting dude - very polite and well-spoken but likes the way he lives and doesn't bother anybody.  Apparently has a "normal" family here but doesn't want to live with them.
