I made this recipe for Elk - but, it will work just as well with beef. Much to the chagrin to some and the applause of others...it contains beans.
1- lb Elk or Beef - preferably coarse grind
2- dried Anaheim chile peppers ( these are mild - you can substitute a hotter variety if you need. I recommend that you try this recipe "as is" first tho. It has a nice after burn effect
)
3-4 Tbs *M-3 rub
2-3 Tbs sea salt to taste
1- Tbs sugar ( alternate: 1-cup of ketchup )
1- small can of tomato paste
1- can of Ro-Tel Tomatoes & Chiles
1- bottle Negra Modelo beer ( this is my favorite beer - true "Old Vienna" style lager - rich in mocha, caramel and malty ) You can use others - but this beer really adds to the savory aspects of the dish.....
1-cup water - *IF* needed
1-can Red Kidney Beans with juice
1- Can mixed beans with juice
6-drops of Liquid Smoke ( use a quality one that the one from LEM )
Simmer for 1 hour.
* M-3 has no label yet...but is available by request.
