My Favorite Chili Recipe

I made this recipe for Elk - but, it will work just as well with beef. Much to the chagrin to some and the applause of others...it contains beans. ;D


1- lb Elk or Beef - preferably coarse grind

2- dried Anaheim chile peppers ( these are mild  - you can substitute a hotter variety if you need. I recommend that you try this recipe "as is" first tho. It has a nice after burn effect  ;))

3-4 Tbs  *M-3 rub

2-3 Tbs sea salt to taste

1- Tbs sugar ( alternate: 1-cup of ketchup )

1- small can of tomato paste

1- can of Ro-Tel Tomatoes & Chiles

1- bottle Negra Modelo beer ( this is my favorite beer - true "Old Vienna" style lager - rich in mocha, caramel and malty ) You can use others - but this beer really adds to the savory aspects of the dish.....

1-cup water - *IF* needed

1-can Red Kidney Beans with juice

1- Can mixed beans with juice

6-drops of Liquid Smoke ( use a quality one that the one from LEM )

Simmer for 1 hour.

* M-3 has no label yet...but is available by request.

T, sounds good. I like beans in my chili, er... meat and bean soup...  ;) ;D Alas, I have no M-3 rub. Can it be ordered? If so, would you please send me instructions for doing so? No rush as I can't eat anything spicy for at least a couple of weeks until cleared by the allergist. Man, I'm getting tired of cottage cheese and yogurt!

Better description than "chili" but I'd probably go with "meat, bean, and tomato soup" or (with apologies to Tommy) "pasta sauce with beans." 

tee's an Aggie; you'd think he'd know better.  Oops, what was I thinking?  tee's an Aggie; he meets the expectations that term engenders.

i'm writing this one down.  and if ya'll haven't tried M-3 your missing out.  I use a it as my most favorite marinades.  great on chicken, seafood, beef and veges.

IMHO...

Chile should not have beans and the meat should not be ground...

but that's just the way I prefer it.

Thanks for the chili recipe Tee! I saved it and will have to try soon as it is getting cool here. Now some of you can call it meat bean and tomato soup if you want, but to me Chili has to have beans in it and will always call it Chili!  ;) I would call the other stuff meat with red chili sauce! Don

I would call you a single minded hard Arse....but Hard shell will have to do.... :D HEY - your recipe looked really good (( bear in mind MY recipe has to feed people in the East - and I am tired of fighting them all by myself over "beans/no beans ;))

I like it all - beans I usually have - sounds like a great quick chile recipe.  One that can easily be done relatively quickly after work.
