Pumpkin Harvest Loaf
« Reply #-1 on: October 12, 2013, 02:57:42 PM »
Wife made me the best Pumpkin loaf this morning, I had two slices it was so good.

Smashing some walnurts :)

1-3/4 cup flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1/2 cup butter at room temperature
1 cup sugar
2 eggs at room temperature
1- 15oz can of pumpkin or 1-1/2 cups
1/2 cup of chocolate chips
3/4 cup of crushed walnuts

Mix all ingredients. Bake in bread pan at 350° F for 50 to 60 minutes. This loaf took 70 minutes.

GLAZE

1/2 cup of powdered sugar
1/8 tsp. nutmeg
1 to 2 Tbsp. cream or milk
Mix all together and pour over warm pumpkin loaf, cool then serve.

Bet you can't eat just one slice ;)

It looks really dense and moist, almost like a pudding. Oooh a warm slice of that with some fresh whipped cream would be heavenly!

The recipe that my wife got from her high school Girl friend  said if you double the recipe you could use a angel food cake pan, how cool would that be  ;)

My MIL would love this! Me too!
Plus we have a "baker" in our office, it would be fun to bring a small piece in to rock the boat a little.  Anonymously of course.  Hehe  ;D

I have been on a pumpkin kick recently.  Everything but pumpkin pie.  Tastes fine, but feels like baby food in the mouth.

I don't care much for pumpkin , but since its a loaf I'd be willing to give it a try. Looks very good.
