Tri-Tip & Crab Fritter
Surf & Turf

The wife had a hankering for some crab, so we picked up a pound of lump crab meat and decided to cook it up into some fritters with a side of tri-tip.

The MAk 1 Star was setup with the MAK Griddle & Split Grate, set to 275°, a sprinkling of some seasonings and the tri-tips were on.


Asparagus on an upper half rack, then later some Garlic & Herb Beer Drop Biscuits.


Mixed up the Beer Batter Crab Fritters: Lump Crab, Flour, egg, Baking Powder, Beer, Roasted Red Pepper, Chopped Scallions & some seasonings.


Tri-tip, Asparagus & Biscuits are done...

Time to fry the fritters!


Tri-tips sliced nice & thick...


Crab Fritters Plated...


Biscuits brushed with some melted Garlic & Chive Butter...


Plated & served with some rice...


The Crab cakes were tender, hot & full of flavor.




We ate well tonight!

Finally found tri-tip here in Alabama at a Piggly Wiggly in the swanky part of town. Nice looking hunks of meat running at $6.99 a pound. I will be trying one soon.

Believe it or not we pulled those two tri-tips out of the freezer. The store that WAS carrying them has now stopped! :(

If you can get them for $6.99/lb it may not be the best price, but it's also not a terrible price.  They were going for $7.99/lb here.  Still, it beats $12.99 - $13.99/lb for more expensive cuts yet you'll feel like your eating steak that cost that much.

Here's the fritter recipe. It's simple & based off of my own Jamaican Conch Fritter recipe I've played around with.

Crab Fritters

Dry Ingredients:
2 cups flour
1 tsp. baking powder
1 TBS. sugar.
1/2 tsp Thyme
1 tsp salt.
1/2 tsp. Ground Allspice or Nutmeg
1/2 tsp. Paprika
1/4 tsp. ground red pepper


Wet Ingredients:
1 lb. Crab Meat
2 - 3 scallions finely chopped.
1 roasted red pepper diced (about 1/2 cup)
1 egg beaten
3/4 cup (6 oz.) Beer

Mix the dry ingredients together in a bowl. In a separate bowl mix the wet ingredients. Combine the two & mix into a stiff batter. Use a scoop or teaspoon to drop the batter into hot oil and fry until golden brown.



You can keep them round & deep fry (like I did here), or flatten into patty shape & fry in shallow oil (like I did above), whichever you prefer.
