Tomato-Mozz-Basil sandwich

I'm not sure if this should be here or in veggies (even though tomato is a fruit)...

Garden-fresh grape tomatoes, fresh basil, mozzarella, a bit of good olive oil and some chipotle mayo on crusty bread

It makes for a nice snack or could be an appetizer

That looks outstanding.  On the rare occasion that I like something without meat, tomato and mozz are a couple of my favorites.

Definitely a winner  ;D  -- my problem would be trying to decide whether or not to add a few slices of bacon  ::)

That sure works for me!

All of those great flavors with a nice touch of olive oil.

My wife had something similar at lunch today here in Prague.  Hers was prepared on a relatively thin roll  similar to a ciabatta roll and then put into a panini press.  I had several bites.  Really good!!  Kit went well with my Czech version of potato soup.

Looks outstanding; that would definitely be a hit with the missus, who would likely substitute a splash of balsamic for the mayo - me... I'd stick with the chipotle  ;)
