Breakfast tacos using cheese as the shell

Did this one a while ago, just found the pic (was lost on another PC!  ;D)

Cheese was heated on a hot griddle until the bottom browned nicely - the filling consisted of bacon, a little crumbled sausage, diced potatoes, onions, and of course, more cheese  :P

When almost done, the one side was folded over the other, then removed from the heat and allowed to slightly cool - shortly the cheese "shell" hardened.

Result: crisp cheesy shell, moist potatoes complementing the smoky bacon and tang of the onion

I have made chees crisps before but never thought of using them as a taco! Nice idea & looks good!!! Don

One of my faves. I justify it by saying I don't use much more cheese than I would on a "normal" taco and I save carbs, etc. by not eating a tortilla.  Probably BS but it works for me.

I have doen this with Parmesan cheese..what king did you use? I'm thinking you can use any kind..just gotta watch it as it melts.  Pam .☆´¯`•.¸¸. ི♥ྀ

I love the Parmesan crisps all by themselves because they are so savory - actually like to eat them with one of the Costco hummus brands.

Because, I'm a Costco junkie, I used what they call Mexican blend, Pam - I think it contains Monterrey Jack, medium cheddar, queso quesadilla and asadero.

I think you're correct - you can use almost any kind of semi hard cheese
