Cheeseburger Soup



This is a family favorite cold weather comfort food.  It's rich, super easy and only takes about an hour to make from start to finish.


Ingredients: No specific amounts, so just wing it!

Ground Beef
Onion
Potatoes
Carrots
Celery
Tomato Paste
Salt & Pepper to taste

Velveeta or American cheese (Cheddar does not work well with this).

Mashed Potato flakes, corn starch or flour to thicken

Note: You can use beef broth for this recipe, if you like, but trust me when I tell you it's not really needed. Besides the ground beef & veggies, the tomato paste adds a lot of richness, and the cheese completes the flavor.

You can also add a bottle of beer, which adds more depth to the flavor.


Prep:

Cut up the veggies.   Brown the hamburger meat & onions seasoning with salt & pepper (drain the fat).  Add the meat & veggies to a stock pot. Add the water, tomato paste, pepper (to taste) and a modest amount of salt (remember the cheese contains salt too).  Bring to a boil, reduce heat slightly and cook on a slow boil just until the veggies are tender.  Taste & adjust seasoning if needed and thicken as desired.  All that's left is to either stir the American/Velveeta cheese right into the pot, or...


Serve without cheese as Hamburger Soup and let folks add their own cheese.






Optional: Top with Bacon crumbles for Bacon-Cheeseburger soup!
