Marinate the sliced beef for a few hours and then grill it -- hot and fast -- to medium rare

Here's the recipe:
1 pound sliced flank steak (or sirloin or rib eye)
1/2 cup reduced sodium soy sauce
1/2 cup diced scallions
1/3 cup granulated sugar
1/3 cup Mirin or Sake
2 tablespoons toasted sesame oil
2 tablespoons toasted sesame seeds
2 teaspoons minced garlic
Combine all of the ingredients, except the beef, in a small saucepan. Heat over medium-low heat until the sugar dissolves. Cool completely.
Add the sliced beef and marinate, refrigerated, for at least four hours or overnight.
Remove the beef from the marinade and drain. Reheat the marinade.
Prepare the grill for medium-high (350 degrees F.) direct cooking. If desired, thread the beef onto skewers. Cook the beef slices about three minutes per side (medium rare) or to the desired degree of doneness.
Plate the beef and garnish with chopped scallions and sesame seeds. Drizzle with reheated marinade. Serve with steamed rice and cucumber salad.
