Bradley smoked cheddar/jalapeno crispy crust bread

We were in the mood for crispy crust bread, but wanted a savory one - had plenty of cheese and fresh jalapenos in the fridge


A serious helping of freshly shredded smoked cheddar and two jalapenos, finely diced

My sweetie is the dough master, and she likes to keep it more wet than she uses for pizza dough - this creates the steamy environment in the Dutch oven that develops the thick crispy crust that we dearly love

Folding in the cheese and jalapeno

... just out of the oven

... now on the counter, we're waiting for the crackling to stop before we take a couple of slices topped with nothing but butter

Great lookin bread!!! I make one that is no-knead in the Dutch oven that looks similar, was this no-knead? I haven't done one in a while; this makes me want some! Don

Thanks Don!  Almost no-knead - my missus folded in the cheese and pepper, kneading ever so slightly.

Just cut a couple of slices - the bread is still hot and melted the butter.  We can taste the rich creamy smoky cheddar, giving the bread an almost wood-fired quality, and the jalapenos added that little bit of spice to send it over the top - this is one of our favorite breads to have with nothing more than butter

lol, I was too busy eating - will get one this evening however as we plan to gobble down some more  ;D

Looks really good, can you post the bread recipe?

I had to get this from the missus because she does not let me touch the dough  ;D

Here's the basic dough recipe that she uses for bread and pizza - then we simply add whatever we want
  • 2 cups bread flour - however any kind will do
  • 1 teaspoon yeast
  • 1 teaspoon salt
  • 1-1.5 cups water - the amount is variable depending on the "feel" of the dough
Mix flour, salt, and yeast with the handle end of a wooden spoon.

Add water slowly and stir until the dough looks sticky.

Cover loosely with plastic wrap and let rise until it doubles in volume (about 2-4 hours)

Scrape the dough out onto a floured surface and knead for a minute or so.  Now is when you add any additional ingredients such as herbs, cheese, etc.

Form into a ball and place into a generously floured tea towel and return to the bowl - ensure that the dough is loosely covered with the tea towel and let rise for another hour or two.

Place a Dutch oven into your oven and preheat to 450F (let the Dutch oven sit for about 30 minutes in the 450F oven before you add the dough

After preheating, dump the dough ball into the Dutch oven, make several slits in the surface of the dough ball and return the Dutch oven to the main oven - bake for 30 minutes

Crack the lid and return to the oven for another 10-15 minutes depending on how dark you want the crust.

If you want pizza crust, just use less water - the dough is simply not as sticky



In this particular loaf, we added the cheese and jalapeno (she "lets" me shred the cheese and dice the peppers  ;D)

I think I used 2-3 cups or so of cheese (probably closer to 3, but absolute measurements don't matter), and 2 jalapenos, finely diced.

The bread ended up crispy on the outside, and warm and cheesy/chewy on the inside.  Because we went rather light on the jalapeno, every couple of bites or so, we'd get a burst of jalapeno flavor and a little heat.

it looks super good.  slice a piece off and put a egg one it plz.  maybe a slice of ham too?  milk on side.   ;)

Here's a pic of dinner tonight, with an interior of the bread as well

Along with the bread, we had smoked Gouda, smoked goat cheese, and Stilton.  On the far edge is smoked salmon.  On an aside, we found this cheese tray at Costco some time ago, and just now used it for the first time.  It is all hardwood, and is done quite nicely - beautiful for entertaining.
